Gluten Free & Sugar Free Hearty Mini Cinnamon Muffins

This recipe will also be featured in Culinary Elegance Non Gluten Cookbook coming out SOON!.  This cookbook features all non gluten foods made gourmet, as well as recipes for the lactose intolerant such as myself.  You may be on a restricted diet, but you still can enjoy food the way it was meant to be enjoyed...healthy and delicious!

Ingredients:
1 1/4 tsp ground cinnamon
1 cup brown rice flour
1 1/4 tsp pure powdered stevia
2.5 tbsp olive oil
3 cage free brown eggs beaten
3 tsp aluminum free baking powder
½ tsp fine sea salt


Directions:
Preheat oven to 400F.  In a large mixing bowl mix all the dry ingredients together……the cinnamon, brown rice flour, stevia, sea salt, and baking powder.  (Make sure the baking powder is aluminum free to keep this recipe healthy.)  Mix all the dry ingredients together thoroughly.  Then add in the olive oil and mix it in thoroughly.  Last, add in the beaten eggs and mix throughout the mixture thoroughly.  It’s important that you add the eggs in last.  Slightly grease a mini muffin tin and pour in the muffin batter to the top of each muffin well in the tin.  Place in oven and bake for about 17 minutes.  Check periodically to make sure muffins are not burning.  Yields about 20-25 mini muffins.  Delicious and guilt free snack!
